Sauternes Sauternes is a sweet white wine made in the Sauternais region of France. Sauternes wine is made from a blend of Semillon, Sauvignon blanc, and Muscadelle grapes. Due to the unusual climate of the area, the grapes are affected by a fungus known as 'noble rot' which causes the flavors and sugars in the grapes to become more concentrated.

Theflavor of Sauvignon Blanc stands apart from Pinot Grigio as it has more of an herbal, grassy-type flavor as opposed to the fruitier flavor of the Pinot. This flavor comes from a compound in the grapes known as pyrazine. Depending on the climate the grapes are grown in, you can get more subtle fruity flavors, but it's not going to be quite CabernetSauvignon and Shiraz grapes were sourced from different regions within Australia, and microvinified with a skin contact period of 6 days.
